Introduction

This qualification covers compliance with food safety legislation, the application and monitoring of good hygiene practice, how to implement food safety management procedures and the application and monitoring of good practice regarding contamination, microbiology and temperature control.

Duration: Self Study combined with 2 Days classroom, 08.30 – 17.30

Prior Knowledge

Those attending this course are expected to have a minimum of Level 1 in English and Maths or equivalent.

Course Objectives

The objective of this qualification is to support a role in the workplace and give learners personal growth and engagement in learning.  The qualification is designed for learners who wish to progress to higher or supervisory level within a food catering business.

Course Structure

This course is commonly delivered over 3 classroom days.  In this flexible and economical structure, the course will be delivered as a pre-course work book and subsequent 2 day classroom learning.  The work book will be available 2 weeks prior to attending the course and delegates are required to complete the self study questions and bring the completed workbook with them to the course.

Course Content

  • The importance of food safety management procedures and complying with the law
  • The role of the supervisor in maintaining food safety
  • Ensuring that microbiological, chemical, physical and allergenic hazards are controlled
  • Ensuring good stock control and documentation
  • The importance of ensuring good personal hygiene and preventing contamination including handwashing, protective clothing, cuts training and reporting illness
  • Ensuring work areas and equipment are kept clean and safe
  • Ensuring safe waste disposal and pest management
  • Implementing food safety management systems

Certification

Delegates successfully completing the Highfield Level 3 Award in Food Safety for Catering (RQF) course and examination will be awarded a Highfield Qualifications certificate.  Qualification Number: 603/4942/6

The RQF is a qualification framework regulated by Ofqual. It is also suitable for delivery in Wales and is regulated by Qualifications Wales.
